Ingredients

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups zucchini, chopped
  • 4 cups vegetable broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: fresh basil for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Add garlic and cook for 1 minute more until fragrant.
  4. Add zucchini and vegetable broth to the pot.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes, or until zucchini is tender.
  6. Season with salt and pepper.
  7. For a creamier soup, blend with an immersion blender or in a regular blender until smooth.
  8. Serve hot, garnished with fresh basil if desired.
