Description

A simple and delicious homemade tomato soup made with fresh, ripe tomatoes. This recipe is perfect for a healthy and comforting meal.


Ingredients

  • 2 lbs fresh ripe tomatoes, cored and quartered
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon sugar (optional, to balance acidity)
  • Salt and freshly ground black pepper to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add the chopped onion and cook until softened, about 5-7 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Add the quartered tomatoes to the pot.
  5. Pour in the vegetable broth.
  6. Bring the soup to a boil, then reduce heat and simmer for 20-25 minutes, or until tomatoes are very soft.
  7. Carefully transfer the soup to a blender or use an immersion blender to blend until smooth.
  8. Return the soup to the pot. Season with salt, pepper, and sugar if using.
  9. Heat through gently before serving.
  10. Serve hot, garnished with fresh basil leaves.

Notes

  • For a creamier soup, you can add a splash of heavy cream or coconut milk before serving.
  • Adjust seasoning to your preference.
