- 2 lbs fresh ripe tomatoes, cored and quartered
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon sugar (optional, to balance acidity)
- Salt and freshly ground black pepper to taste
- Fresh basil leaves, for garnish
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add the chopped onion and cook until softened, about 5-7 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Add the quartered tomatoes to the pot.
- Pour in the vegetable broth.
- Bring the soup to a boil, then reduce heat and simmer for 20-25 minutes, or until tomatoes are very soft.
- Carefully transfer the soup to a blender or use an immersion blender to blend until smooth.
- Return the soup to the pot. Season with salt, pepper, and sugar if using.
- Heat through gently before serving.
- Serve hot, garnished with fresh basil leaves.
Notes
- For a creamier soup, you can add a splash of heavy cream or coconut milk before serving.
- Adjust seasoning to your preference.
