Ingredients

  • 1/2 red onion, chopped
  • 1 bell pepper (any color), chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika

  • Salt and black pepper to taste
  • 4 large eggs
  • Fresh cilantro or parsley, chopped, for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced sweet potato and cook for 8-10 minutes, stirring occasionally, until tender and slightly browned.
  3. Add chopped red onion and bell pepper to the skillet. Cook for another 5-7 minutes until softened.
  4. Stir in minced garlic, smoked paprika, and cumin. Cook for 1 minute until fragrant.
  5. Season the hash with salt and black pepper to your liking.
  6. Create four wells in the hash. Crack an egg into each well.
  7. Cover the skillet and cook for 5-8 minutes, or until the egg whites are set and the yolks are cooked to your preference.
  8. Garnish with fresh cilantro or parsley if desired. Serve immediately.
