Instructions
- Heat olive oil in a large skillet over medium heat.

- Add chopped red onion and bell pepper to the skillet. Cook for another 5-7 minutes until softened.

- Season the hash with salt and black pepper to your liking.
- Create four wells in the hash. Crack an egg into each well.
- Cover the skillet and cook for 5-8 minutes, or until the egg whites are set and the yolks are cooked to your preference.
- Garnish with fresh cilantro or parsley if desired. Serve immediately.
