- 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 tbsp olive oil
- 1 cup uncooked rice (white or brown)
- 2 cups water or chicken broth
- 1/2 cup honey
- 1/4 cup sriracha
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 clove garlic, minced
- 1 tsp grated fresh ginger
- 1 cup broccoli florets
- 1 cup sliced bell peppers (any color)
- 1/2 cup sliced red onion
- Optional toppings: sesame seeds, chopped green onions, sliced jalapeños
Instructions
- Cook rice according to package directions.
- While rice cooks, heat olive oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through.
- In a small bowl, whisk together honey, sriracha, soy sauce, rice vinegar, garlic, and ginger.
- Add broccoli, bell peppers, and red onion to the skillet with the chicken. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
- Pour the honey sriracha sauce over the chicken and vegetables. Stir to coat and cook for another 2-3 minutes until the sauce thickens.
- Serve the honey sriracha chicken and vegetable mixture over cooked rice.
- Garnish with optional toppings if desired.
