Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 cup uncooked rice (white or brown)
  • 2 cups water or chicken broth
  • 1/2 cup honey
  • 1/4 cup sriracha
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 clove garlic, minced
  • 1 tsp grated fresh ginger
  • 1 cup broccoli florets
  • 1 cup sliced bell peppers (any color)
  • 1/2 cup sliced red onion
  • Optional toppings: sesame seeds, chopped green onions, sliced jalapeños

Instructions

  1. Cook rice according to package directions.
  2. While rice cooks, heat olive oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through.
  3. In a small bowl, whisk together honey, sriracha, soy sauce, rice vinegar, garlic, and ginger.
  4. Add broccoli, bell peppers, and red onion to the skillet with the chicken. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
  5. Pour the honey sriracha sauce over the chicken and vegetables. Stir to coat and cook for another 2-3 minutes until the sauce thickens.
  6. Serve the honey sriracha chicken and vegetable mixture over cooked rice.
  7. Garnish with optional toppings if desired.
