- 1 teaspoon baking soda

- 1 cup (2 sticks) unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups apple cider
- 1 cup chopped toasted pecans
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the apple cider, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
- Gently fold in the chopped toasted pecans.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 55-65 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
Notes
- Toast pecans in a dry skillet over medium heat until fragrant, about 5-7 minutes, stirring frequently. Let them cool before chopping.
- For an extra spiced flavor, you can add a pinch of ground ginger to the dry ingredients.
- Serve warm or at room temperature.
- This cake can be stored in an airtight container at room temperature for up to 3 days.
