Description

A moist and flavorful loaf cake infused with spiced apple cider and studded with toasted pecans. This cake is perfect for autumn and holiday celebrations.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups apple cider
  • 1 cup chopped toasted pecans

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the apple cider, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
  6. Gently fold in the chopped toasted pecans.
  7. Pour the batter into the prepared loaf pan and spread evenly.
  8. Bake for 55-65 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.

Notes

  • Toast pecans in a dry skillet over medium heat until fragrant, about 5-7 minutes, stirring frequently. Let them cool before chopping.
  • For an extra spiced flavor, you can add a pinch of ground ginger to the dry ingredients.
  • Serve warm or at room temperature.
  • This cake can be stored in an airtight container at room temperature for up to 3 days.
