Ingredients

  • 2 cups diced tomatoes
  • 1 can black beans, drained
  • 1 cup corn
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Tortilla chips for serving
  • Avocado for topping

Instructions

  1. Add shredded chicken, diced tomatoes, black beans, corn, onion, garlic, chicken broth, cumin, chili powder, salt, and pepper to the slow cooker.
  2. Stir to combine all ingredients.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. Once cooked, shred the chicken in the pot using two forks.
  5. Serve hot with tortilla chips and avocado on top.
