Description

A classic beef stew made in a slow cooker with tender beef and hearty vegetables. This recipe is perfect for a comforting and easy meal.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 large carrots, peeled and chopped
  • 3 potatoes, peeled and cubed
  • 1 cup frozen peas

Instructions

  1. Toss beef with flour, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Brown beef on all sides.
  3. Transfer beef to a slow cooker.
  4. Add onion and garlic to the skillet and cook until softened, about 5 minutes.
  5. Add onion mixture to the slow cooker.
  6. Pour in beef broth and Worcestershire sauce. Stir in thyme and rosemary.
  7. Cover and cook on low for 8 hours or on high for 4 hours.
  8. Add carrots and potatoes to the slow cooker. Cook for an additional 1.5 to 2 hours on low, or until vegetables are tender.
  9. Stir in frozen peas during the last 30 minutes of cooking.
  10. Serve hot.

Notes

  • For thicker stew, you can mix 2 tablespoons of cornstarch with 2 tablespoons of water and stir it into the stew during the last 30 minutes of cooking.
  • You can add other vegetables like celery or parsnips.
  • This stew freezes well.
