- 2 pounds beef chuck, cut into 1-inch cubes
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 large carrots, peeled and chopped
- 3 potatoes, peeled and cubed
- 1 cup frozen peas
Instructions
- Toss beef with flour, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat. Brown beef on all sides.
- Transfer beef to a slow cooker.
- Add onion and garlic to the skillet and cook until softened, about 5 minutes.
- Add onion mixture to the slow cooker.
- Pour in beef broth and Worcestershire sauce. Stir in thyme and rosemary.
- Cover and cook on low for 8 hours or on high for 4 hours.
- Add carrots and potatoes to the slow cooker. Cook for an additional 1.5 to 2 hours on low, or until vegetables are tender.
- Stir in frozen peas during the last 30 minutes of cooking.
- Serve hot.
Notes
- For thicker stew, you can mix 2 tablespoons of cornstarch with 2 tablespoons of water and stir it into the stew during the last 30 minutes of cooking.
- You can add other vegetables like celery or parsnips.
