- 1 pound boneless, skinless chicken breasts, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 2 tablespoons olive oil
- 1 packet (1 ounce) fajita seasoning
- 8 small flour tortillas
- Optional toppings: shredded cheese, sour cream, salsa, guacamole, chopped cilantro
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the sliced chicken, bell peppers, and red onion.
- Add the olive oil and fajita seasoning to the bowl. Toss to coat everything evenly.
- Spread the mixture in a single layer on a large baking sheet.
- Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender-crisp.
- Warm the tortillas according to package directions.
- Serve the fajita mixture in warm tortillas with your favorite toppings.
Notes
- For spicier fajitas, add a pinch of cayenne pepper to the seasoning mix.
- You can substitute chicken thighs for chicken breasts.
- If you don’t have fajita seasoning, you can make your own with chili powder, cumin, paprika, garlic powder, and onion powder.
