- 1 pound canned salmon, drained and flaked
- 1 cup breadcrumbs
- 2 large eggs, beaten
- 1/4 cup finely chopped onion
- 2 tablespoons chopped fresh parsley
- 1 tablespoon lemon juice

- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil, for greasing
Instructions
- Preheat your oven to 375°F (190°C). Grease a loaf pan with olive oil.
- In a large bowl, combine the flaked salmon, breadcrumbs, beaten eggs, chopped onion, parsley, lemon juice, Dijon mustard, salt, and pepper.
- Mix all ingredients thoroughly until well combined.
- Press the mixture evenly into the prepared loaf pan.
- Bake for 25-30 minutes, or until the loaf is firm and lightly golden brown.
- Let the salmon loaf rest for 5-10 minutes before slicing and serving.
