Ingredients

  • 1 pound canned salmon, drained and flaked
  • 1 cup breadcrumbs
  • 2 large eggs, beaten
  • 1/4 cup finely chopped onion
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil, for greasing

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a loaf pan with olive oil.
  2. In a large bowl, combine the flaked salmon, breadcrumbs, beaten eggs, chopped onion, parsley, lemon juice, Dijon mustard, salt, and pepper.
  3. Mix all ingredients thoroughly until well combined.
  4. Press the mixture evenly into the prepared loaf pan.
  5. Bake for 25-30 minutes, or until the loaf is firm and lightly golden brown.
  6. Let the salmon loaf rest for 5-10 minutes before slicing and serving.
