Description

Ingredients

  • 1 head of romaine lettuce, chopped
  • 2 cups cherry tomatoes, halved
  • 1 cup corn kernels (fresh or frozen)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 red onion, thinly sliced
  • 1/2 cup chopped fresh cilantro
  • For the dressing: 1/4 cup olive oil, 2 tablespoons lime juice, 1 teaspoon honey, salt and pepper to taste

Instructions

  1. In a large bowl, combine chopped romaine lettuce, halved cherry tomatoes, corn kernels, rinsed black beans, and sliced red onion.
  2. In a small bowl, whisk together olive oil, lime juice, honey, salt, and pepper for the dressing.
  3. Pour the dressing over the salad ingredients.
  4. Add chopped fresh cilantro.
  5. Toss everything gently to combine.
  6. Serve immediately as a side dish for your barbecue.
