  • 2 tbsp olive oil
  • 1 lemon, halved
  • Salt and pepper to taste

  • 1 cup cherry tomatoes
  • 8 oz linguine
  • 1/4 cup heavy cream
  • 2 tbsp grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place salmon on a baking sheet. Drizzle with olive oil, squeeze half a lemon over it, and season with salt and pepper.
  3. Toss asparagus with 1 tsp olive oil, salt, and pepper. Add to the baking sheet with the salmon.
  4. Bake for 12-15 minutes, or until salmon is cooked through and asparagus is tender-crisp.
  5. While salmon bakes, cook linguine according to package directions. Reserve 1/2 cup pasta water.
  6. In a large skillet, melt butter over medium heat. Add minced garlic and cherry tomatoes. Cook until tomatoes soften, about 3-5 minutes.
  7. Add cooked linguine, heavy cream, grated Parmesan, and reserved pasta water to the skillet. Toss to combine and heat through.
  8. Serve salmon and asparagus alongside the creamy tomato linguine. Garnish with fresh basil and remaining lemon half.
