Ingredients

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1 1/2 cups granulated sugar
  • 3/4 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 (15 ounce) can pumpkin puree
  • 1/2 cup milk

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
  3. In a separate bowl, whisk together sugar, vegetable oil, eggs, and vanilla extract until well combined.
  4. Stir in the pumpkin puree and milk until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Pour the batter into the prepared baking pan.
  7. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.

Notes

  • For a cream cheese frosting, beat together 8 oz cream cheese, 1/2 cup softened butter, and 2 cups powdered sugar. Add 1 tsp vanilla extract.
  • Ensure you use pumpkin puree, not pumpkin pie filling.
  • This cake can be made into cupcakes. Bake for 18-20 minutes.
