Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, cloves, and salt.
- In a separate bowl, whisk together the milk, pumpkin puree, eggs, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix.
- Heat a lightly oiled griddle or frying pan over medium-high heat.
- Pour about 1/4 cup of batter for each pancake onto the hot griddle.
- Cook for 2-3 minutes per side, or until golden brown and cooked through.
- Serve warm with your favorite toppings.
Notes
- For thinner pancakes, add a little more milk to the batter.
- To make ahead, store leftover batter in the refrigerator for up to 2 days.
- Ensure your pumpkin puree is not pumpkin pie filling, which contains added sugar and spices.
