Description

Delicious and easy pumpkin bars with cream cheese frosting, perfect for fall and holiday gatherings.


Ingredients

  • 15 oz pumpkin puree
  • 3/4 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • For the Frosting:
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1 tsp vanilla extract
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13 inch baking pan.
  2. In a large bowl, whisk together pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until well combined.
  3. In a separate medium bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Pour the batter into the prepared baking pan and spread evenly.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. While the bars are baking, prepare the frosting. In a medium bowl, beat together softened cream cheese and butter until smooth.
  8. Beat in vanilla extract. Gradually add powdered sugar, mixing until the frosting is light and fluffy.
  9. Once the pumpkin bars are completely cooled, spread the cream cheese frosting evenly over the top.
  10. Cut into squares and serve.

Notes

  • Ensure pumpkin puree is not pumpkin pie filling.
  • For a richer flavor, you can add chopped pecans or walnuts to the batter.
  • Store leftover bars in an airtight container in the refrigerator.
