Ingredients

  • 2 lbs potatoes, peeled and diced
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup milk
  • 1/2 cup heavy cream
  • 4 slices bacon, cooked and crumbled
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • Fresh chives or parsley for garnish

Instructions

  1. Melt butter in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and cook for 1 minute more until fragrant.
  3. Stir in flour and cook for 1 minute, stirring constantly.
  4. Gradually whisk in broth until smooth.
  5. Add diced potatoes. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
  6. Stir in milk and heavy cream. Heat through, but do not boil.
  7. Season with salt and pepper to taste.
  8. Ladle soup into bowls. Garnish with crumbled bacon, shredded cheese, and fresh chives or parsley.

Notes

  • For a thicker soup, mash some of the potatoes against the side of the pot before adding the milk and cream.
  • Use a gluten-free flour blend for a gluten-free version.
  • Vegetable broth can be substituted for chicken broth for a vegetarian option.
