One-Pot Cajun Chicken and Rice: 5 Bold Flavors to Savor

Description

A flavorful one-pot meal featuring Cajun spices, chicken, rice, and vegetables.


Ingredients

Scale
  • 1 pound chicken thighs, boneless and skinless
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken and cook until browned on both sides.
  3. Remove chicken and set aside.
  4. Add onion, bell pepper, and garlic to the pot. Sauté until soft.
  5. Stir in rice and Cajun seasoning. Cook for 2 minutes.
  6. Add chicken broth and diced tomatoes. Bring to a boil.
  7. Return chicken to the pot. Cover and reduce heat to low.
  8. Cook for 20-25 minutes until rice is tender and chicken is cooked through.

Notes

  • Adjust the spice level by adding more or less Cajun seasoning.
  • Use chicken breasts if preferred.
  • Leftovers can be stored in the fridge for up to 3 days.
