A flavorful one-pot meal featuring Cajun spices, chicken, rice, and vegetables.
Ingredients

- 1 pound chicken thighs, boneless and skinless
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 tablespoon Cajun seasoning
- 1 bell pepper, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup diced tomatoes
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chicken and cook until browned on both sides.
- Remove chicken and set aside.
- Add onion, bell pepper, and garlic to the pot. Sauté until soft.
- Stir in rice and Cajun seasoning. Cook for 2 minutes.
- Add chicken broth and diced tomatoes. Bring to a boil.
- Return chicken to the pot. Cover and reduce heat to low.
- Cook for 20-25 minutes until rice is tender and chicken is cooked through.
Notes
- Adjust the spice level by adding more or less Cajun seasoning.
- Use chicken breasts if preferred.
- Leftovers can be stored in the fridge for up to 3 days.
