One-Pan Salmon and Smashed Potatoes with Lemon-Garlic Sauce

Description

A simple and flavorful one-pan meal featuring tender salmon and crispy smashed potatoes, all coated in a bright lemon-garlic sauce. Perfect for a healthy and easy weeknight dinner.


Ingredients

  • 1.5 lbs baby potatoes
  • 2 tbsp olive oil, divided
  • 1 tsp salt, divided
  • 0.5 tsp black pepper, divided
  • 1 lb salmon fillet
  • 0.5 tsp paprika
  • 4 cloves garlic, minced
  • 0.5 cup chicken broth
  • 0.25 cup lemon juice
  • 1 tbsp butter
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Boil baby potatoes until fork-tender, about 15-20 minutes. Drain well.
  3. On a large baking sheet, toss the boiled potatoes with 1 tbsp olive oil, 0.5 tsp salt, and 0.25 tsp pepper.
  4. Gently smash each potato with the bottom of a glass or mug.
  5. Arrange the smashed potatoes on one side of the baking sheet.
  6. Pat the salmon fillet dry and place it on the other side of the baking sheet.
  7. Rub the salmon with the remaining 1 tbsp olive oil, paprika, remaining 0.5 tsp salt, and 0.25 tsp pepper.
  8. Bake for 10 minutes.
  9. While the salmon and potatoes bake, prepare the sauce. In a small saucepan, heat the minced garlic in a little olive oil over medium heat until fragrant, about 1 minute.
  10. Pour in the chicken broth and lemon juice. Bring to a simmer and cook for 3-5 minutes, until slightly reduced.
  11. Stir in the butter until melted. Season with salt and pepper to taste.
  12. Remove the baking sheet from the oven. Drizzle the lemon-garlic sauce over the salmon and potatoes.
  13. Return to the oven and bake for another 5-8 minutes, or until the salmon is cooked through and flakes easily with a fork.
  14. Garnish with fresh parsley before serving.
