- 4 medium sweet potatoes, peeled and diced
- 1/4 cup maple syrup
- 2 tablespoons olive oil
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 cup pecans, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine sweet potatoes, maple syrup, olive oil, cinnamon, and salt.
- Spread the mixture on a baking sheet.
- Roast for 25 minutes, stirring halfway through.
- Add chopped pecans to the baking sheet.
- Roast for an additional 10 minutes until sweet potatoes are tender and pecans are toasted.
