  • 1 pound ground beef or Italian sausage
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can diced tomatoes
  • 4 cups beef or vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup lasagna noodles, broken into pieces
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • Fresh basil, for garnish (optional)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add ground beef or sausage and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  2. Add chopped onion and cook until softened, about 5 minutes.
  3. Stir in minced garlic and cook for 1 minute more until fragrant.
  4. Pour in crushed tomatoes, diced tomatoes, and broth. Add oregano, basil, salt, and pepper. Stir to combine.
  5. Bring the soup to a simmer, then add the broken lasagna noodles.
  6. Cook according to noodle package directions, stirring occasionally, until noodles are tender.
  7. Stir in ricotta cheese and Parmesan cheese until well combined.
  8. Ladle soup into bowls. Top with shredded mozzarella cheese and fresh basil, if desired.

Notes

  • For a vegetarian option, omit the meat and use vegetable broth. Add extra vegetables like zucchini or spinach.
  • You can use pre-cooked Italian sausage for convenience.
