- 1 cup quinoa, rinsed
- 2 cups chicken or vegetable broth

- 4 cloves garlic, minced

- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Cook quinoa: Combine rinsed quinoa and broth in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until liquid is absorbed. Fluff with a fork.
- Prepare shrimp: While quinoa cooks, pat shrimp dry. Season with salt and pepper.
- Sauté garlic: Heat olive oil in a large skillet over medium heat. Add minced garlic and cook until fragrant, about 30 seconds.
- Cook shrimp: Add shrimp to the skillet. Cook for 2-3 minutes per side, until pink and opaque.
- Add lemon: Stir in lemon juice, lemon zest, and red pepper flakes (if using). Cook for 1 minute more.
- Combine and serve: Add cooked quinoa to the skillet with the shrimp. Toss to combine. Garnish with fresh parsley.

- For a spicier dish, add more red pepper flakes.
