Description

Ingredients

  • 1.5 lbs lean ground turkey
  • 1 large onion, chopped
  • 2 bell peppers (any color), chopped
  • 2 cans (15 oz each) kidney beans, rinsed and drained
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (28 oz) diced tomatoes, undrained
  • 1 can (10 oz) Rotel (diced tomatoes and green chilies), undrained
  • 1 cup low-sodium chicken broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste

Instructions

  1. Brown the ground turkey in a skillet over medium-high heat. Drain off any excess fat.
  2. Transfer the browned turkey to your slow cooker.
  3. Add the chopped onion, bell peppers, kidney beans, black beans, diced tomatoes, and Rotel to the slow cooker.
  4. Pour in the chicken broth.
  5. Stir in the chili powder, cumin, smoked paprika, and cayenne pepper (if using). Season with salt and black pepper.
  6. Stir everything together to combine.
  7. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  8. Taste and adjust seasonings before serving.

Notes

  • Serve with your favorite toppings like shredded cheese, Greek yogurt, avocado, or chopped cilantro.
  • This chili freezes well for future meals.
  • For a thicker chili, you can leave the lid slightly ajar during the last hour of cooking or mash some of the beans against the side of the slow cooker.
