- 1.5 lbs lean ground turkey
- 1 large onion, chopped
- 2 bell peppers (any color), chopped
- 2 cans (15 oz each) kidney beans, rinsed and drained
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (28 oz) diced tomatoes, undrained
- 1 can (10 oz) Rotel (diced tomatoes and green chilies), undrained
- 1 cup low-sodium chicken broth
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- Salt and black pepper to taste
Instructions
- Brown the ground turkey in a skillet over medium-high heat. Drain off any excess fat.
- Transfer the browned turkey to your slow cooker.
- Add the chopped onion, bell peppers, kidney beans, black beans, diced tomatoes, and Rotel to the slow cooker.
- Pour in the chicken broth.
- Stir in the chili powder, cumin, smoked paprika, and cayenne pepper (if using). Season with salt and black pepper.
- Stir everything together to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Taste and adjust seasonings before serving.
Notes
- Serve with your favorite toppings like shredded cheese, Greek yogurt, avocado, or chopped cilantro.
- This chili freezes well for future meals.
- For a thicker chili, you can leave the lid slightly ajar during the last hour of cooking or mash some of the beans against the side of the slow cooker.
