- 1 lb ground beef or turkey
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (15 oz) can diced tomatoes, undrained
- 1 (15 oz) can kidney beans, rinsed and drained
- 1 (10 oz) can Rotel diced tomatoes and green chilies, undrained
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped cilantro
Instructions
- Brown ground meat in a large pot or Dutch oven over medium-high heat. Drain excess fat.
- Add chopped onion and cook until softened, about 5 minutes.
- Stir in minced garlic and cook for 1 minute more until fragrant.
- Add diced tomatoes, kidney beans, Rotel, chili powder, cumin, salt, and pepper. Stir to combine.
- Bring to a simmer, then reduce heat to low, cover, and cook for at least 15-20 minutes, stirring occasionally.
- Serve hot with your favorite toppings.
Notes
- For a spicier chili, use a can of hot Rotel.
- Add other vegetables like corn or bell peppers for extra nutrition.
