Ingredients

  • 1 lb ground beef or turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 oz) can diced tomatoes, undrained
  • 1 (15 oz) can kidney beans, rinsed and drained
  • 1 (10 oz) can Rotel diced tomatoes and green chilies, undrained
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro

Instructions

  1. Brown ground meat in a large pot or Dutch oven over medium-high heat. Drain excess fat.
  2. Add chopped onion and cook until softened, about 5 minutes.
  3. Stir in minced garlic and cook for 1 minute more until fragrant.
  4. Add diced tomatoes, kidney beans, Rotel, chili powder, cumin, salt, and pepper. Stir to combine.
  5. Bring to a simmer, then reduce heat to low, cover, and cook for at least 15-20 minutes, stirring occasionally.
  6. Serve hot with your favorite toppings.

Notes

  • For a spicier chili, use a can of hot Rotel.
  • Add other vegetables like corn or bell peppers for extra nutrition.
