- 1 tablespoon olive oil
- 1 cup chopped yellow onion
- 2 cloves garlic, minced
- 4 cups broccoli florets
- 4 cups chicken or vegetable broth
- 1 cup milk
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more.
- Add broccoli florets and broth. Bring to a boil, then reduce heat and simmer for 10-15 minutes, or until broccoli is tender.
- Carefully transfer soup to a blender and blend until smooth, or use an immersion blender.
- Return soup to the pot. Stir in milk and cheddar cheese.
- Heat gently until cheese is melted and soup is heated through. Do not boil.
- Season with salt and pepper to taste.
Notes
- For a thicker soup, use less broth or add a cornstarch slurry.
- Add a pinch of nutmeg for extra flavor.
- Top with extra cheese or croutons before serving.
