Description

A quick and easy Dorito casserole recipe perfect for family dinners or potlucks. This cheesy, savory dish features crunchy Doritos layered with seasoned ground beef and a creamy sauce.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 packet taco seasoning
  • 1 can (15 ounces) diced tomatoes, undrained
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (10 ounces) Rotel diced tomatoes and green chilies, undrained
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 bag (9 ounces) Nacho Cheese Doritos, crushed
  • 1 cup shredded Monterey Jack cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef and chopped onion over medium-high heat until the beef is browned and the onion is tender. Drain off any excess grease.
  3. Stir in the taco seasoning, diced tomatoes, kidney beans, and Rotel. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  4. Remove the skillet from the heat and stir in the sour cream and cheddar cheese until well combined and the cheese is melted.
  5. Spread half of the crushed Doritos evenly over the bottom of a 9×13 inch baking dish.
  6. Pour the beef mixture over the Doritos.
  7. Sprinkle the remaining crushed Doritos over the top of the beef mixture.
  8. Top with the shredded Monterey Jack cheese.
  9. Bake for 20-25 minutes, or until the casserole is hot and bubbly and the cheese is melted.
  10. Let stand for a few minutes before serving.

Notes

  • For a spicier casserole, use spicy Nacho Cheese Doritos or add a pinch of cayenne pepper to the meat mixture.
  • You can substitute ground turkey or chicken for the ground beef.
  • Feel free to add other vegetables like corn or black olives.
  • Serve with your favorite taco toppings like lettuce, salsa, or guacamole.
