- 1/2 cup powdered sugar
- 8 ounces cream cheese, softened (or vegan cream cheese for DF)
- 15 ounces pumpkin puree
- 2 teaspoons pumpkin pie spice
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup strong brewed coffee, cooled
- 1/4 cup rum or dark rum (optional)
- 24 ladyfingers (or gluten-free ladyfingers)
- Cocoa powder, for dusting
Instructions
- In a large bowl, whip the heavy cream (or coconut milk) with powdered sugar until stiff peaks form. Set aside.
- In another bowl, beat the cream cheese until smooth. Add pumpkin puree, pumpkin pie spice, vanilla extract, and salt. Mix until well combined.
- Gently fold the whipped cream into the pumpkin mixture until just combined.
- In a shallow dish, combine the cooled coffee and rum (if using).
- Quickly dip each ladyfinger into the coffee mixture. Arrange a layer of dipped ladyfingers in the bottom of a 9×13 inch baking dish.
- Spread half of the pumpkin cream mixture evenly over the ladyfingers.
- Repeat with another layer of dipped ladyfingers and the remaining pumpkin cream mixture.
- Cover the dish and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the dessert to set.
- Before serving, dust generously with cocoa powder.
Notes
- For a vegan option, use vegan cream cheese and full-fat coconut milk. Ensure your ladyfingers are also vegan.
- Adjust sweetness to your preference.
- For a stronger coffee flavor, add a little more instant coffee to the brewing process.
