Ingredients
¾ cup raw cashews, soaked for 15–20 minutes
1½ cups unsweetened almond milk or oat milk
3 garlic cloves, minced
2 tablespoons olive oil
¼ cup nutritional yeast
1 tablespoon lemon juice
Salt and pepper to taste
8 ounces fettuccine pasta (use gluten-free if desired)
Optional toppings: chopped parsley, sautéed mushrooms, roasted chickpeas
Instructions
1. Soak cashews in hot water for 15–20 minutes. Drain and rinse.
2. In a skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant.
3. Add soaked cashews, almond milk, garlic, lemon juice, nutritional yeast, salt, and pepper to a blender. Blend until smooth and creamy.
4. Pour blended sauce into a saucepan. Simmer on medium-low for 5–7 minutes, stirring occasionally, until slightly thickened.
5. Cook fettuccine pasta in salted boiling water until al dente. Reserve ½ cup of pasta water, then drain.
6. Combine pasta with sauce in a pan, tossing gently. Add pasta water gradually if needed to loosen the sauce.
7. Serve hot, topped with parsley, mushrooms, or chickpeas if desired.
