Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
- In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set this dry mix aside.
- In a large mixing bowl, combine the melted coconut oil (or vegan butter), brown sugar, and white sugar. Mix until smooth and creamy.
- Add the unsweetened applesauce and vanilla extract to the wet mixture. Stir well until fully blended.
- Gradually add the dry ingredients to the wet mixture, stirring until a thick cookie dough forms.
- Fold in the dairy-free chocolate chips or chunks evenly throughout the dough.
- Scoop tablespoon-sized portions of dough onto the baking sheet, leaving about 2 inches between each cookie.
- For thicker cookies, chill the dough in the refrigerator for 15–30 minutes before baking.
- Bake in the preheated oven for 10 to 12 minutes, or until edges are golden and centers appear just set.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
