A creamy and cozy white chicken chili recipe made in the crockpot. This easy dish is perfect for a comforting meal.

- 2 pounds boneless, skinless chicken breasts
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 (15 ounce) cans cannellini beans, rinsed and drained
- 1 (4 ounce) can diced green chilies
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon chili powder
- 1/4 teaspoon cayenne pepper (optional)
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and black pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped cilantro, avocado
Instructions
- Place chicken breasts in the bottom of your slow cooker.
- Add chopped onion, minced garlic, rinsed cannellini beans, diced green chilies, cumin, oregano, chili powder, and cayenne pepper (if using) on top of the chicken.
- Pour chicken broth over the ingredients.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through.
- Remove chicken from the slow cooker and shred it with two forks.
- Return the shredded chicken to the slow cooker.
- Stir in heavy cream.
- Season with salt and black pepper to your liking.
- Stir everything together and cook for another 15-20 minutes on high, or until heated through and creamy.
- Serve hot with your favorite toppings.
Notes
- For a spicier chili, add an extra pinch of cayenne pepper or a jalapeño pepper, minced.
- If you prefer a thicker chili, you can mash some of the beans against the side of the slow cooker before adding the cream.
- This chili freezes well. Let it cool completely before transferring to freezer-safe containers.
