- 1 tablespoon olive oil
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese

- Salt and black pepper to taste
- 1 cup chopped sun-dried tomatoes (oil-packed, drained)
- 5 ounces fresh spinach
- Optional: Red pepper flakes for heat
Instructions
- Place chicken breasts in the slow cooker. Drizzle with olive oil and season with salt, pepper, Italian seasoning, and garlic powder.
- In a bowl, whisk together heavy cream, chicken broth, and Parmesan cheese. Pour over the chicken.
- Add the chopped sun-dried tomatoes to the slow cooker.
- Cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through and tender.
- About 15 minutes before serving, stir in the fresh spinach until wilted.
- Serve hot, spooning the creamy sauce over the chicken.
Notes
- For a thicker sauce, you can mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir it into the slow cooker during the last 30 minutes of cooking.
