- 2 pounds boneless, skinless chicken breasts or thighs
- 1 large onion, chopped
- 3 carrots, chopped
- 3 celery stalks, chopped
- 8 cups chicken broth
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/4 teaspoon dried rosemary
- 1 bay leaf
- 8 ounces egg noodles
- 2 tablespoons chopped fresh parsley, for garnish
Instructions
- Place chicken, onion, carrots, and celery in your crockpot.
- Pour in chicken broth.
- Add salt, pepper, thyme, rosemary, and bay leaf.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Remove chicken and shred it. Return shredded chicken to the crockpot.
- Stir in egg noodles and cook for an additional 20-30 minutes, or until noodles are tender.
- Remove bay leaf before serving.
- Garnish with fresh parsley.
Notes
- For a thicker soup, you can add a cornstarch slurry (2 tablespoons cornstarch mixed with 2 tablespoons water) in the last 30 minutes of cooking.
- Vegetables can be pre-chopped to save time.
- This soup freezes well. Let it cool completely before freezing.
