Description

A simple and delicious recipe for crispy baked teriyaki tofu bowls with broccolini. This dish is perfect for a healthy weeknight dinner or meal prep.


Ingredients

  • 1 block (14-16 oz) extra-firm tofu, pressed and cubed
  • 2 tbsp cornstarch
  • 1 tbsp soy sauce (or tamari for gluten-free)
  • 1/4 cup teriyaki sauce
  • 1 tbsp sesame oil
  • 1 tsp grated fresh ginger
  • 1 clove garlic, minced
  • 1 bunch broccolini, trimmed
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Cooked rice, for serving
  • Sesame seeds, for garnish
  • Green onions, sliced, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, toss the pressed tofu cubes with cornstarch until evenly coated.
  3. In a small bowl, whisk together the soy sauce, teriyaki sauce, sesame oil, ginger, and garlic.
  4. Place the coated tofu on one half of the prepared baking sheet. Drizzle half of the teriyaki sauce mixture over the tofu.
  5. On the other half of the baking sheet, toss the broccolini with olive oil, salt, and pepper.
  6. Bake for 20-25 minutes, flipping the tofu halfway through, until the tofu is golden brown and crispy and the broccolini is tender-crisp.
  7. While the tofu and broccolini are baking, prepare your rice according to package directions.
  8. Once baked, drizzle the remaining teriyaki sauce mixture over the tofu and broccolini.
  9. Assemble the bowls by placing rice in each bowl, topping with the crispy teriyaki tofu and broccolini.
  10. Garnish with sesame seeds and sliced green onions.
