A simple and delicious recipe for crispy baked teriyaki tofu bowls with broccolini. This dish is perfect for a healthy weeknight dinner or meal prep.

- 1 block (14-16 oz) extra-firm tofu, pressed and cubed
- 2 tbsp cornstarch
- 1 tbsp soy sauce (or tamari for gluten-free)
- 1/4 cup teriyaki sauce
- 1 tbsp sesame oil
- 1 tsp grated fresh ginger
- 1 clove garlic, minced
- 1 bunch broccolini, trimmed
- 1 tbsp olive oil
- Salt and pepper to taste
- Cooked rice, for serving
- Sesame seeds, for garnish
- Green onions, sliced, for garnish
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a medium bowl, toss the pressed tofu cubes with cornstarch until evenly coated.
- In a small bowl, whisk together the soy sauce, teriyaki sauce, sesame oil, ginger, and garlic.
- Place the coated tofu on one half of the prepared baking sheet. Drizzle half of the teriyaki sauce mixture over the tofu.
- On the other half of the baking sheet, toss the broccolini with olive oil, salt, and pepper.
- Bake for 20-25 minutes, flipping the tofu halfway through, until the tofu is golden brown and crispy and the broccolini is tender-crisp.
- While the tofu and broccolini are baking, prepare your rice according to package directions.
- Once baked, drizzle the remaining teriyaki sauce mixture over the tofu and broccolini.
- Assemble the bowls by placing rice in each bowl, topping with the crispy teriyaki tofu and broccolini.
- Garnish with sesame seeds and sliced green onions.

- Ensure your tofu is well-pressed to achieve maximum crispiness.
- Adjust the amount of teriyaki sauce to your preference.
- For a spicier kick, add a pinch of red pepper flakes to the sauce.
