Description

Ingredients

  • 2 teaspoons baking powder

  • 1/2 cup milk

  • 2 cups chopped apples (about 2 medium apples)
  • Vegetable oil for frying
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. In a large bowl, whisk together flour, 1/4 cup sugar, baking powder, 1/2 teaspoon cinnamon, and salt.
  2. In a separate bowl, whisk together eggs, milk, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  4. Gently fold in the chopped apples.
  5. In a shallow dish, combine 1/2 cup sugar and 1 tablespoon cinnamon for dusting.
  6. Heat about 2 inches of vegetable oil in a heavy-bottomed pot or Dutch oven to 375°F (190°C).
  7. Carefully drop spoonfuls of the apple fritter batter into the hot oil, being careful not to overcrowd the pot. Fry for 2-3 minutes per side, until golden brown and cooked through.
  8. Remove fritters with a slotted spoon and drain on paper towels.
  9. While still warm, toss the fritters in the cinnamon sugar mixture until well coated.
  10. Serve immediately.
