Instructions
- In a large bowl, whisk together flour, 1/4 cup sugar, baking powder, 1/2 teaspoon cinnamon, and salt.
- In a separate bowl, whisk together eggs, milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Gently fold in the chopped apples.
- In a shallow dish, combine 1/2 cup sugar and 1 tablespoon cinnamon for dusting.
- Heat about 2 inches of vegetable oil in a heavy-bottomed pot or Dutch oven to 375°F (190°C).
- Carefully drop spoonfuls of the apple fritter batter into the hot oil, being careful not to overcrowd the pot. Fry for 2-3 minutes per side, until golden brown and cooked through.
- Remove fritters with a slotted spoon and drain on paper towels.
- While still warm, toss the fritters in the cinnamon sugar mixture until well coated.
- Serve immediately.
