Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 8 oz mushrooms, sliced
  • 4 cloves garlic, minced
  • 1.5 cups heavy cream
  • 1/2 cup chicken broth
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Season chicken pieces with salt and pepper.
  2. Heat olive oil and butter in a large skillet over medium-high heat.
  3. Add chicken to the skillet and cook until browned on all sides. Remove chicken and set aside.
  4. Add sliced mushrooms to the skillet and cook until softened and browned, about 5-7 minutes.
  5. Add minced garlic and cook for 1 minute until fragrant.
  6. Pour in chicken broth and scrape up any browned bits from the bottom of the skillet.
  7. Reduce heat to medium-low, then stir in heavy cream and dried thyme.
  8. Bring to a gentle simmer, stirring occasionally, until the sauce thickens slightly.
  9. Return the cooked chicken to the skillet and simmer for 5-7 minutes, or until chicken is cooked through and the sauce coats the chicken.
  10. Season with salt and pepper to taste.
  11. Garnish with fresh parsley before serving.

  • For a richer sauce, use half-and-half instead of heavy cream.
  • Add a splash of white wine when sautéing mushrooms for extra flavor.
