- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 8 oz pasta (like fettuccine or penne)
- 1 tbsp olive oil
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Juice of 1 lemon
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add chicken pieces and cook until browned.
- Add minced garlic to the skillet and cook for 1 minute until fragrant.
- Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Add the pasta to the skillet, ensuring it’s mostly submerged in the liquid. Cover and cook according to pasta package directions, stirring occasionally, until al dente.
- Stir in heavy cream, Parmesan cheese, and lemon juice. Cook, stirring, until the sauce thickens.
- Season with salt and black pepper to taste.
- Garnish with fresh parsley before serving.
