Description

A rich and comforting creamy chicken and wild rice soup, perfect for a hearty meal. This recipe is easy to make and ideal for fall and winter.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup chopped yellow onion
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 2 cloves garlic, minced
  • 8 cups chicken broth
  • 1 cup wild rice blend
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and freshly ground black pepper to taste
  • 1 cup half-and-half or heavy cream
  • 1/4 cup chopped fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken pieces and cook until browned on all sides. Remove chicken and set aside.
  2. Add chopped onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
  3. Stir in minced garlic and cook for 1 minute until fragrant.
  4. Pour in chicken broth and add the wild rice blend, thyme, and rosemary. Bring to a boil, then reduce heat, cover, and simmer for 45-50 minutes, or until rice is tender.
  5. Return the cooked chicken to the pot. Season with salt and pepper to taste.
  6. Stir in the half-and-half or heavy cream. Heat through gently, but do not boil.
  7. Ladle soup into bowls and garnish with fresh parsley before serving.

Notes

  • For a thicker soup, you can add 1/4 cup of flour with the vegetables and cook for 1 minute before adding the broth.
  • You can substitute cooked shredded chicken for fresh chicken breast.
  • Add your favorite vegetables like peas or corn during the last 10 minutes of simmering.
