A rich and comforting creamy chicken and wild rice soup, perfect for a hearty meal. This recipe is easy to make and ideal for fall and winter.

- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup chopped yellow onion
- 1 cup chopped carrots
- 1 cup chopped celery
- 2 cloves garlic, minced
- 8 cups chicken broth
- 1 cup wild rice blend
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Salt and freshly ground black pepper to taste
- 1 cup half-and-half or heavy cream
- 1/4 cup chopped fresh parsley, for garnish
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken pieces and cook until browned on all sides. Remove chicken and set aside.
- Add chopped onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and add the wild rice blend, thyme, and rosemary. Bring to a boil, then reduce heat, cover, and simmer for 45-50 minutes, or until rice is tender.
- Return the cooked chicken to the pot. Season with salt and pepper to taste.
- Stir in the half-and-half or heavy cream. Heat through gently, but do not boil.
- Ladle soup into bowls and garnish with fresh parsley before serving.
Notes
- For a thicker soup, you can add 1/4 cup of flour with the vegetables and cook for 1 minute before adding the broth.
- You can substitute cooked shredded chicken for fresh chicken breast.
- Add your favorite vegetables like peas or corn during the last 10 minutes of simmering.
