Cinnamon Sugar Churro Cheesecake Bars combine the flavors of churros with creamy cheesecake in a bar form.
Ingredients

- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 tablespoon ground cinnamon
- 1/2 cup powdered sugar
- 1/4 cup granulated sugar for topping
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs and melted butter. Press into the bottom of a baking dish.
- In another bowl, beat cream cheese, granulated sugar, and vanilla until smooth.
- Add eggs one at a time, mixing well after each addition.
- Pour the cheesecake mixture over the crust.
- In a small bowl, mix cinnamon and granulated sugar. Sprinkle over the cheesecake layer.
- Bake for 30-35 minutes or until set. Let cool.
- Chill in the refrigerator for at least 2 hours before cutting into bars.
Notes
- Store leftovers in the fridge.
- Can be served with whipped cream.
- For a no-bake option, use a no-bake cheesecake filling.
