- Juice of 1 lime
- 8–10 corn or flour tortillas
- 1 ripe avocado
- 1/4 cup Greek yogurt or sour cream
- 1 tbsp lime juice
- 1 clove garlic, minced
- Salt to taste
- Optional toppings: shredded cabbage, chopped cilantro, pico de gallo, pickled red onions
Instructions
- Preheat oven to 400°F (200°C) or prepare your grill.
- Pat the fish dry. In a small bowl, mix olive oil, chipotle powder, chili powder, cumin, garlic powder, salt, and pepper.
- Rub the spice mixture all over the fish fillets.
- Bake for 12-15 minutes, or grill for 4-5 minutes per side, until the fish is cooked through and flakes easily.
- While the fish cooks, prepare the avocado crema. Mash the avocado in a bowl.
- Stir in Greek yogurt (or sour cream), lime juice, minced garlic, and salt until smooth and creamy.
- Flake the cooked fish into bite-sized pieces.
- Warm the tortillas according to package directions.
- Squeeze fresh lime juice over the flaked fish.
- Assemble the tacos: Fill each tortilla with flaked fish, top with avocado crema, and add your favorite optional toppings.
