Description

A delightful twist on classic strawberry shortcake, featuring a sweet and tangy cherry jam layer for an extra burst of flavor. This recipe combines tender biscuits, fresh strawberries, whipped cream, and homemade or store-bought cherry jam.

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into pieces
  • 3/4 cup heavy cream, plus more for brushing
  • 1 pint fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar (for strawberries)
  • 1/2 cup cherry jam
  • 1 cup heavy cream, whipped with 2 tablespoons powdered sugar

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, 1/4 cup sugar, baking powder, and salt.
  3. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  4. Stir in 3/4 cup heavy cream until just combined. Do not overmix.
  5. Turn the dough out onto a lightly floured surface and gently pat it into a 3/4-inch thick round. Cut out biscuits using a 2-inch round cutter.
  6. Place biscuits on the prepared baking sheet. Brush the tops with a little heavy cream and sprinkle with a pinch of sugar.
  7. Bake for 12-15 minutes, or until golden brown. Let cool slightly.
  8. While the biscuits bake, toss the sliced strawberries with 1/4 cup sugar and let them macerate for about 10 minutes.
  9. To assemble, split the warm biscuits in half. Spread a layer of cherry jam on the bottom half.
  10. Top the jam with a generous portion of macerated strawberries.
  11. Add a dollop of whipped cream.
  12. Place the top half of the biscuit over the whipped cream. Serve immediately.

Notes

  • For a richer flavor, use buttermilk instead of heavy cream in the biscuit dough.
  • Ensure your butter and cream are very cold for the flakiest biscuits.
  • Any good quality cherry jam will work well.
  • Adjust the sugar for the strawberries based on their sweetness.
