- 1/4 cup granulated sugar
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cut into pieces
- 3/4 cup heavy cream, plus more for brushing
- 1 pint fresh strawberries, hulled and sliced
- 1/4 cup granulated sugar (for strawberries)
- 1/2 cup cherry jam
- 1 cup heavy cream, whipped with 2 tablespoons powdered sugar
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, 1/4 cup sugar, baking powder, and salt.
- Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
- Stir in 3/4 cup heavy cream until just combined. Do not overmix.
- Turn the dough out onto a lightly floured surface and gently pat it into a 3/4-inch thick round. Cut out biscuits using a 2-inch round cutter.
- Place biscuits on the prepared baking sheet. Brush the tops with a little heavy cream and sprinkle with a pinch of sugar.
- Bake for 12-15 minutes, or until golden brown. Let cool slightly.
- While the biscuits bake, toss the sliced strawberries with 1/4 cup sugar and let them macerate for about 10 minutes.
- To assemble, split the warm biscuits in half. Spread a layer of cherry jam on the bottom half.
- Top the jam with a generous portion of macerated strawberries.
- Add a dollop of whipped cream.
- Place the top half of the biscuit over the whipped cream. Serve immediately.
Notes
- For a richer flavor, use buttermilk instead of heavy cream in the biscuit dough.
- Ensure your butter and cream are very cold for the flakiest biscuits.
- Any good quality cherry jam will work well.
- Adjust the sugar for the strawberries based on their sweetness.
