Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 medium potatoes, peeled and diced
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a large pot over medium heat. Drain off any excess grease.
  2. Add the chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more.
  3. Stir in the beef broth and diced potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  4. While the potatoes are cooking, melt butter in a separate saucepan over medium heat. Whisk in the flour and cook for 1 minute, stirring constantly, to create a roux.
  5. Gradually whisk in the milk until smooth. Cook, stirring, until the mixture thickens.
  6. Stir the thickened milk mixture into the soup.
  7. Add the shredded cheddar and Monterey Jack cheeses to the soup. Stir until the cheese is melted and the soup is creamy.
  8. Season with salt and pepper to taste.
  9. Serve hot.
