- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 medium potatoes, peeled and diced
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup butter
- 1/4 cup all-purpose flour
- Salt and pepper to taste
Instructions
- Brown the ground beef in a large pot over medium heat. Drain off any excess grease.
- Add the chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more.
- Stir in the beef broth and diced potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- While the potatoes are cooking, melt butter in a separate saucepan over medium heat. Whisk in the flour and cook for 1 minute, stirring constantly, to create a roux.
- Gradually whisk in the milk until smooth. Cook, stirring, until the mixture thickens.
- Stir the thickened milk mixture into the soup.
- Add the shredded cheddar and Monterey Jack cheeses to the soup. Stir until the cheese is melted and the soup is creamy.
- Season with salt and pepper to taste.
- Serve hot.
