- 8 large eggs
- 1 cup shredded cheese
- 1 cup cooked sausage or bacon
- 1 can black beans, drained and rinsed
- 1 cup diced bell peppers
- 1 cup diced onions
- 1 tablespoon olive oil
- 8 large flour tortillas
Instructions
- In a skillet, heat olive oil over medium heat.
- Add diced onions and bell peppers, cooking until soft.
- In a bowl, whisk eggs and pour into the skillet, scrambling until fully cooked.
- Stir in sausage or bacon, black beans, and cheese.
- Remove from heat and let cool slightly.
- Lay tortillas flat and fill each with the egg mixture.
- Wrap each burrito tightly and place in freezer bags.
- Label and freeze for future use.
